In The Kitchen With Noot: Cucumber Seaweed Salad
Ingredients:
- 1/2 cup Wakame
- 1 cup Water
- 2 cucumbers
- -1/2 Tsp Salt
- 1 Tbsp sesame seeds
Dressing ingredients:
- Mirin 2 Tbsp
- Rice vinegar 2 Tbsp
- Soy Sauce 1 Tbsp
Place the Wakame and water together in a bowl, let sit for 10 minutes, then drain. Add the cucumbers in, sprinkle with salt to draw out the moisture and let sit for another 5 min. Squeeze cucumbers over a strainer to extract as much liquid as possible.
For the dressing, mix the Mirin, rice vinegar and soy sauce together in a separate bowl. Pour the dressing over the cucumber seaweed salad, and garnish with sesame seeds.
